Fattoush salad is a common dish in the Middle East. It uses fresh veggies, pita in place of croutons, and is topped with a tangy pomegranate molasses vinaigrette.
Salad Ingredients:
- 2 loaves pita bread
- Extra virgin olive oil
- Kosher salt
- 2 tsp. sumac, divided
- 1 heart of Romaine lettuce, chopped
- 1 English cucumber, chopped
- 5 Roma tomatoes, chopped
- 5 green onions, chopped
- 5 radishes, thinly sliced
- 2 cups parsley leaves (no stems), chopped
- 1 cup mint leaves, chopped
Vinaigrette Ingredients:
- 1 lemon, juiced
- 1/3 cup extra virgin olive oil
- 1-2 tbsp. pomegranate molasses
- Salt & pepper, to taste
- 1 tsp. sumac
- 1/4 tsp. ground cinnamon
- 1/4 tsp. ground allspice
Instructions:
- Rip the pita bread into bite-sized pieces. In a large pan, heat 3 tbsp. of olive oil. Add the pita bread slices and fry on both sides until browned. Transfer to a plate lines with a paper towel to drain the excess oil. Season to taste with salt, pepper, and sumac.
- Combine all of the chopped vegetables in a large mixing bowl.
- In a separate bowl, whisk all of the vinaigrette ingredients together. Season to taste with the spices.
- Pour the vinaigrette over the vegetables and toss to mix. Add in the fried pita bread and toss again. Season with more sumac if needed.
