  • 1 English cucumber, chopped
  • 5 Roma tomatoes, chopped
  • 5 green onions, chopped
  • 5 radishes, thinly sliced
  • 2 cups parsley leaves (no stems), chopped
  • 1 cup mint leaves, chopped

Vinaigrette Ingredients:

  • 1 lemon, juiced
  • 1/3 cup extra virgin olive oil
  • 1-2 tbsp. pomegranate molasses
  • Salt & pepper, to taste
  • 1 tsp. sumac
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground allspice

Instructions:

  1. Rip the pita bread into bite-sized pieces. In a large pan, heat 3 tbsp. of olive oil. Add the pita bread slices and fry on both sides until browned. Transfer to a plate lines with a paper towel to drain the excess oil. Season to taste with salt, pepper, and sumac.
  2. Combine all of the chopped vegetables in a large mixing bowl.
  3. In a separate bowl, whisk all of the vinaigrette ingredients together. Season to taste with the spices.
  4. Pour the vinaigrette over the vegetables and toss to mix. Add in the fried pita bread and toss again. Season with more sumac if needed.
